Delight in these airy and fragrant sponge drops that combine the tropical essence of coconut and the floral notes of hibiscus. This unconventional vegan treat is perfect for a sweet snack or a unique dessert at your next gathering.

Ingredients

  • 1 cup coconut milk
  • 1/2 cup aquafaba (chickpea brine)
  • 1/4 cup maple syrup
  • 1 cup all-purpose flour
  • 1/2 cup shredded unsweetened coconut
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/4 cup dried hibiscus flowers
  • 1/2 cup water
  • 1 tsp vanilla extract
  • Powdered sugar for dusting (optional)

Instructions

Begin by preparing the hibiscus infusion. Boil the water in a small saucepan and add the dried hibiscus flowers. Let it simmer for about 10 minutes. Remove from heat, let cool, and strain the liquid to remove the flowers. Set aside.

In a mixing bowl, whisk together the aquafaba until it reaches soft peaks. This will give your sponge drops that fluffy texture.

In another bowl, combine the coconut milk, maple syrup, and vanilla extract. Add the cooled hibiscus infusion and mix well.

In a separate bowl, sift together the all-purpose flour, shredded coconut, baking powder, baking soda, salt, ground cinnamon, and ground cardamom. Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.

Gently fold in the whipped aquafaba, ensuring that the mixture remains light and airy.

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Using a tablespoon, drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart. The batter will spread slightly, creating lovely little sponge drops.

Bake in the preheated oven for about 15-20 minutes, or until the sponge drops are golden on the edges and a toothpick inserted into the center comes out clean.

Once baked, remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

For an elegant finish, dust the cooled sponge drops with powdered sugar before serving. Enjoy these spiced coconut delights with a cup of tea or as a sweet treat any time of the day!
