Indulging in a creamy, dreamy gelato doesn’t have to mean compromising on your plant-based lifestyle. This recipe is a delightful tribute to my journey into veganism, inspired by a summer afternoon spent with friends, all savoring the simple joys of homemade desserts. The sweetness of fresh berries paired with the richness of coconut creates a heavenly treat that even skeptics can’t resist!

Ingredients

  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup almond milk
  • 3/4 cup maple syrup
  • 1 tablespoon pure vanilla extract
  • 1/4 teaspoon sea salt
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 tablespoon lemon juice

Instructions

First, in a medium mixing bowl, whisk together the full-fat coconut milk, almond milk, maple syrup, vanilla extract, and sea salt until well combined. The mixture should be smooth and creamy.

Next, take your mixed fresh berries and gently mash them in a separate bowl with the lemon juice. This will help release their natural juices and enhance their flavor. You want a delightful combination of whole berries and a bit of berry puree.

Incorporate the mashed berries into the coconut milk mixture, stirring gently to create a beautiful marbled effect. This adds both flavor and a lovely visual element to your gelato.

Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, typically about 20-25 minutes, until it reaches a soft-serve consistency. If you don’t have an ice cream maker, don’t worry! Simply pour the mixture into a shallow dish and place it in the freezer. Stir every 30 minutes for about 2-3 hours until it reaches your desired creaminess.

Once your gelato is ready, transfer it to an airtight container and freeze for at least 2 hours to firm up.

When it’s time to serve, scoop out the gelato into bowls or cones, and top with additional fresh berries for a burst of color and flavor. Gather your friends and family, and enjoy the sweet moments together, relishing the creamy goodness of your homemade vegan gelato.

This recipe not only satisfies your sweet tooth but also makes for a delightful conversation starter about the joys of plant-based living. Enjoy!
