Nestled in the heart of India, the vibrant streets are alive with the colors, sounds, and tantalizing aromas of street food vendors. Among the many delights, one dessert stands out: Kulfi. This traditional frozen treat, rich and creamy, is a beloved indulgence that melts in your mouth. Inspired by my travels through the bustling markets of Delhi, I’ve created a unique Mango Cardamom Kulfi that embodies the essence of Indian flavors while bringing a modern twist to this classic dessert.

This recipe combines the luscious sweetness of ripe mangoes with the aromatic warmth of cardamom, creating a delightful dessert that is not only easy to prepare but also bursts with exotic flavors.

Ingredients

  • 2 cups full-fat milk
  • 1 cup heavy cream
  • 1 cup sweetened condensed milk
  • 1 cup ripe mango puree (about 2 medium mangoes)
  • 1 teaspoon ground cardamom
  • 1/4 cup chopped pistachios (for garnish)
  • 1 tablespoon rose water (optional)

Instructions

Start by simmering the milk in a heavy-bottomed saucepan over medium heat. Stir occasionally to prevent it from sticking to the bottom. Allow the milk to reduce slightly until it thickens, about 15-20 minutes.

In a separate mixing bowl, combine the heavy cream and sweetened condensed milk. Stir well until smooth and creamy.

Once the milk has thickened, remove it from the heat and allow it to cool for a few minutes. Then, add the warm milk to the cream mixture. Mix until fully integrated.

Incorporate the ripe mango puree into the mixture, followed by the ground cardamom and rose water (if using). Blend everything together until you achieve a smooth and luscious consistency.

Pour the mixture into kulfi molds or any small cups you have on hand. Tap the molds gently on the counter to remove any air bubbles. Insert popsicle sticks into the center of each mold.

Cover the molds with plastic wrap and place them in the freezer. Allow the kulfi to freeze for at least 6 hours or overnight until completely set.

Once frozen, remove the kulfi from the molds by running them under warm water for a few seconds. This will help release the kulfi smoothly.

Serve the kulfi in bowls or on sticks, garnished with chopped pistachios for an added crunch. Enjoy this creamy, dreamy treat that encapsulates the spirit of India in every delightful bite!
