There’s something magical about the way desserts can evoke nostalgia and create cherished memories. I remember a chilly autumn evening spent with my grandmother in her cozy kitchen, where the aroma of sweet pies wafted through the air. One of her favorites was sugar pie, a simple yet delightful treat that warmed the heart. Inspired by that memory, I decided to modernize it a bit by incorporating health-boosting ingredients, creating a pie that is not only delicious but also nourishing.

This Maple Sugar Pie features a nutty crust made with almond flour and is sweetened with pure maple syrup, making it a wholesome treat for any occasion.

Ingredients

For the crust:
– 1 ½ cups almond flour
– 2 tablespoons coconut oil, melted
– 2 tablespoons maple syrup
– ½ teaspoon sea salt
– 1-2 tablespoons cold water (as needed)

For the filling:
– 1 cup pure maple syrup
– ½ cup coconut milk (full-fat for creaminess)
– 3 large eggs
– 1 teaspoon vanilla extract
– 1 tablespoon cornstarch (or arrowroot powder)
– ½ teaspoon ground cinnamon
– A pinch of sea salt

Instructions

To prepare the crust, preheat your oven to 350°F (175°C). In a mixing bowl, combine the almond flour and sea salt. Add the melted coconut oil and maple syrup, mixing until crumbly. If the mixture is too dry, gradually add cold water, one tablespoon at a time, until it holds together.

Press the crust mixture evenly into the bottom and up the sides of a 9-inch pie dish. Prick the bottom with a fork to prevent bubbling. Bake for 10-12 minutes until lightly golden. Remove from the oven and let it cool slightly.

While the crust is cooling, prepare the filling. In a large mixing bowl, whisk together the maple syrup, coconut milk, eggs, and vanilla extract until well combined. In a separate small bowl, mix the cornstarch, cinnamon, and sea salt, then add it to the wet ingredients. Whisk until smooth and well incorporated.

Pour the filling mixture into the pre-baked crust, spreading it evenly. Bake for an additional 30-35 minutes, or until the filling is set and slightly puffed. The center may still jiggle slightly, but it will firm up as it cools.

Once baked, remove the pie from the oven and allow it to cool at room temperature for at least an hour. For the best flavor, refrigerate the pie for a few hours before serving.

Slice and serve your Maple Sugar Pie chilled or at room temperature, perhaps topped with a dollop of whipped coconut cream or a sprinkle of chopped nuts for added texture.

As you savor each bite, remember that desserts can be both indulgent and nourishing, bringing back memories of love and warmth, just like those evenings spent in my grandmother’s kitchen. Enjoy!
