Ingredients
- For the Dough:
- 2 cups whole wheat flour
- 1/4 cup almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 1/2 cup warm almond milk
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- For the Chia Seed Filling:
- 1/2 cup chia seeds
- 2 cups almond milk
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
- For Topping:
- 1/4 cup chopped nuts (walnuts, almonds, or pecans)
- Powdered sugar (for dusting, optional)
Instructions
Start by preparing the chia seed filling. In a medium bowl, combine the chia seeds, almond milk, maple syrup, vanilla extract, and cinnamon. Stir well and let the mixture sit for about 10 minutes, allowing the chia seeds to absorb the liquid and create a gel-like consistency. Once thickened, stir again and set aside.
For the dough, in a small bowl, dissolve the yeast in the warm almond milk and let it sit for about 5 minutes until frothy. In a large mixing bowl, combine the whole wheat flour, almond flour, and salt. Create a well in the center and add the melted coconut oil, honey or maple syrup, vanilla extract, and the yeast mixture.
Mix the ingredients until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
After the dough has risen, preheat your oven to 375°F (190°C). Roll out the dough on a floured surface into a rectangle, about 1/4 inch thick. Cut the dough into squares, approximately 4×4 inches. Place a spoonful of chia seed filling in the center of each square.
Fold the corners of the dough over the filling to create a pocket, pinching the edges to seal securely. Place the filled pastries on a lined baking sheet, leaving space between each one. Brush the tops with a little melted coconut oil and sprinkle with chopped nuts.
Bake in the preheated oven for 15-20 minutes or until golden brown. Once baked, remove from the oven and allow to cool slightly. Dust with powdered sugar if desired for a touch of sweetness and serve warm.
