These delightful muffins combine the warm, aromatic spices of chai with the nutty flavor of almond flour, creating a unique and satisfying treat. Perfect for breakfast or an afternoon snack!

Ingredients

  • 1 ½ cups almond flour
  • ½ cup coconut sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon ground cloves
  • 1 cup unsweetened almond milk (or any plant-based milk)
  • ¼ cup unsweetened applesauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts or pecans (optional)

Instructions

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

In a large mixing bowl, combine the almond flour, coconut sugar, baking soda, salt, cinnamon, ginger, cardamom, and cloves. Stir well to combine all the dry ingredients.

In a separate bowl, whisk together the almond milk, applesauce, apple cider vinegar, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.

If using, fold in the chopped nuts for added crunch and flavor.

Evenly distribute the batter into the prepared muffin tin, filling each cup about ¾ full.

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
