  • For the Vanilla Layer:
    • 1 cup full-fat coconut milk
    • 1/2 cup maple syrup
    • 1 teaspoon vanilla extract
    • 1 tablespoon almond milk

Instructions

Begin by preparing each layer of ice cream separately. This method ensures that each flavor stands out while maintaining a creamy texture.

For the Chocolate Layer, combine the coconut milk, cocoa powder, maple syrup, and vanilla extract in a blender. Blend until smooth. Melt the dark chocolate chips in a microwave or double boiler, then stir into the chocolate mixture. Transfer to a bowl, cover, and freeze for about 2 hours or until it thickens slightly.

Next, prepare the Strawberry Layer. In the same blender, combine the coconut milk, fresh strawberries, maple syrup, vanilla extract, and lemon juice. Blend until smooth and creamy. Pour into a separate bowl, cover, and freeze for about 2 hours or until it thickens slightly.

For the Vanilla Layer, blend the coconut milk, maple syrup, vanilla extract, and almond milk until smooth. Transfer this mixture to another bowl, cover, and freeze for about 2 hours or until thickened.

Once all three layers have set to a thick, creamy consistency, it’s time to assemble your Neapolitan ice cream. In a loaf pan, alternate layers of chocolate, strawberry, and vanilla mixtures, using a spatula to smooth out each layer before adding the next. You can create swirls by gently running a knife through the layers.

Cover the loaf pan with plastic wrap or a lid and freeze for at least 4 hours, or until completely firm.

To serve, let the ice cream sit at room temperature for about 5 minutes to soften slightly. Scoop out and enjoy your unique, plant-based Neapolitan ice cream!
