This was my inspiration when creating these Chocolate Lemon Basil Squares. By combining zesty lemon with a touch of fresh basil and a chocolate crust, I’ve crafted a dessert that is not only visually stunning but also provides a delightful taste experience that will leave your palate intrigued and satisfied.

Ingredients:

For the crust:
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1/4 teaspoon salt

For the lemon basil filling:
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup fresh lemon juice (about 2-3 lemons)
- Zest of 2 lemons
- 1 tablespoon finely chopped fresh basil
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- A pinch of salt

For garnish:
- Fresh basil leaves
- Lemon zest

Instructions:

Begin by preheating your oven to 350°F (175°C). Prepare an 8x8 inch square baking dish by greasing it lightly or lining it with parchment paper for easy removal.

In a mixing bowl, combine the flour, cocoa powder, powdered sugar, and salt for the crust. Add the softened butter and mix until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of the prepared baking dish to form a crust.

Bake the crust in the preheated oven for 15 minutes, then remove it and allow it to cool slightly while you prepare the filling.

In another bowl, whisk together the granulated sugar and eggs until well combined. Stir in the fresh lemon juice, lemon zest, and finely chopped basil until fully incorporated.

Next, sift in the flour, baking powder, and a pinch of salt. Mix gently until just combined, being careful not to over-mix.

Pour the lemon basil filling over the cooled chocolate crust, spreading it evenly. Bake for an additional 20-25 minutes or until the filling is set and the edges are slightly golden.

Once baked, remove from the oven and allow the squares to cool completely in the pan. Once cooled, refrigerate for at least an hour to help set the filling further.

To serve, cut into squares, and garnish each piece with a fresh basil leaf and a sprinkle of lemon zest for a pop of color and flavor.
