I recall a chilly autumn afternoon when I decided to experiment with a healthier twist on the classic snickerdoodle. I wanted to create a dessert that would not only warm the heart but also nourish the body. With a few nutritious superfoods at hand, my Nutty Chia Snickerdoodles were born! These delightful cookies are packed with wholesome ingredients, providing a delightful crunch and a hint of cinnamon sweetness.

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup chia seeds
  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp sea salt

Cinnamon Sugar Coating

  • 2 tbsp coconut sugar
  • 1 tsp ground cinnamon

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the almond flour, coconut flour, chia seeds, coconut sugar, baking powder, baking soda, ground cinnamon, and sea salt. Whisk the dry ingredients together until well blended.

In another bowl, mix the melted coconut oil, maple syrup, and vanilla extract until combined. Pour the wet ingredients into the dry ingredients and stir until a dough forms. If the dough seems too crumbly, add a teaspoon of water at a time until it comes together.

In a small bowl, mix together the coconut sugar and ground cinnamon for the coating.

Using your hands, scoop out tablespoon-sized portions of dough and roll them into balls. Roll each ball in the cinnamon sugar mixture, ensuring they are well-coated.

Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each ball with the palm of your hand.

Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The cookies will continue to firm up as they cool, so be careful not to overbake them.

Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
