Ingredients

For the Dough:

  • 3 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 cup almond milk, warmed
  • ¼ cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cardamom
  • 1 tbsp lemon zest
  • 1 tbsp orange zest

For the Filling:

  • ½ cup brown sugar
  • 1 tbsp ground cinnamon
  • ½ cup chopped pecans or walnuts
  • ½ cup dried cherries or cranberries
  • 2 tbsp vegan butter, softened

For the Icing:

  • 1 cup powdered sugar
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh orange juice
  • Vibrant colored sprinkles (purple, green, and gold)

Instructions

Start by activating the yeast. In a small bowl, combine the warm almond milk and sugar, then sprinkle the yeast on top. Allow it to sit for about 5-10 minutes until frothy.

In a large mixing bowl, combine the flour, salt, cinnamon, nutmeg, and cardamom. Make a well in the center and pour in the activated yeast mixture, melted coconut oil, and vanilla extract. Add the lemon and orange zest, then mix until a dough forms.

Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

While the dough is rising, prepare the filling. In a small bowl, mix together the brown sugar, ground cinnamon, chopped nuts, dried cherries or cranberries, and softened vegan butter until well combined.

Once the dough has risen, punch it down and roll it out on a floured surface into a large rectangle, about ½ inch thick. Spread the filling evenly over the dough, leaving a small border around the edges.

Starting from one long edge, carefully roll the dough into a log. Pinch the seams to seal and shape the log into a circle, tucking the ends together. Place the cake on a lined baking sheet and let it rise again for 30 more minutes.

Preheat your oven to 350°F (175°C). Bake the King Cake for 25-30 minutes, or until golden brown and cooked through. Allow it to cool on a wire rack.

While the cake cools, prepare the icing. In a medium bowl, whisk together the powdered sugar, lemon juice, and orange juice until smooth and drizzly.

Once the cake has cooled, drizzle the icing over the top, allowing it to drip down the sides. Decorate with vibrant colored sprinkles in traditional Mardi Gras colors: purple, green, and gold.
