There’s something magical about biting into a soft, pillowy marshmallow. Growing up, I loved roasting them over a campfire, watching them puff up and turn golden brown. As I transitioned to a plant-based lifestyle, I thought those sweet memories would be lost. But I was determined to recreate that delight without any animal products. After a few experiments, I found the perfect recipe for fluffy vegan marshmallows that are not only delicious but also easy to make at home.
### Ingredients
– 1 cup aquafaba (the liquid from a can of chickpeas)
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
– 1 cup granulated sugar
– 1/4 cup light corn syrup
– 1/2 teaspoon agar-agar powder
– Powdered sugar (for dusting)
### Instructions
Begin by preparing an 8×8 inch baking dish by greasing it lightly with oil and dusting it with powdered sugar to prevent sticking.
In a mixing bowl, combine the aquafaba, vanilla extract, and salt. Using a hand mixer or stand mixer, whip the aquafaba on high speed until stiff peaks form, similar to whipped egg whites. This may take about 10-15 minutes, so be patient and enjoy the process.
In a small saucepan, combine the granulated sugar, corn syrup, and 1/4 cup of water over medium heat. Stir until the sugar dissolves, then bring the mixture to a gentle boil. Do not stir once boiling; let it cook until it reaches the soft-ball stage (around 240°F or 115°C on a candy thermometer).
While the sugar mixture is boiling, dissolve the agar-agar powder in 1/2 cup of water in a separate saucepan. Bring it to a boil, stirring constantly until it thickens slightly. Remove from heat.
Once the sugar syrup reaches the soft-ball stage, carefully pour it into the whipped aquafaba while mixing on low speed. Gradually increase the speed to high and continue to whip for another 5 minutes until the mixture is thick and glossy.
Next, add the agar-agar mixture to the whipped aquafaba and sugar, blending until well combined. The mixture should be fluffy and hold its shape.
Spoon the marshmallow mixture into the prepared baking dish, spreading it evenly with a spatula. Let it sit at room temperature for 4-6 hours or until it sets completely.
Once set, dust a clean surface with powdered sugar. Turn the marshmallow slab out onto the surface and dust the top with more powdered sugar. Cut into squares or shapes of your choice.
Dust the cut edges with additional powdered sugar to prevent sticking. Enjoy your homemade fluffy vegan marshmallows on their own, in hot cocoa, or roasted over a fire with friends and family.
