Instructions
Begin by creating a delightful mint-infused base for your ice cream.
In a medium saucepan, combine the coconut milk and fresh mint leaves. Heat over medium-low heat until it begins to simmer, stirring occasionally. Remove from heat and let the mint steep for about 30 minutes to infuse the flavor.
Once the mint has infused, strain the mixture into a mixing bowl, discarding the mint leaves. Add the honey or maple syrup, vanilla extract, spirulina powder, and a pinch of sea salt. Whisk until well combined and smooth.
