Ingredients

For the Cinnamon Rolls:

  • 1 ½ cups chickpea flour
  • 1 cup almond milk (or any plant-based milk)
  • 1 tbsp apple cider vinegar
  • 2 tbsp coconut oil, melted
  • ¼ cup maple syrup
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ¼ cup brown sugar
  • ½ cup raisins or chopped nuts (optional)

For the Maple Tahini Drizzle:

  • ¼ cup tahini
  • 2 tbsp maple syrup
  • 1 tbsp warm water (or more for desired consistency)
  • Pinch of sea salt

Instructions

Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper.

In a bowl, combine the almond milk and apple cider vinegar. Let it sit for about 5 minutes to curdle slightly.

In a large mixing bowl, whisk together the chickpea flour, baking powder, baking soda, salt, ground cinnamon, and brown sugar until well combined.

Add the melted coconut oil and maple syrup to the almond milk mixture, then pour this liquid mixture into the dry ingredients. Stir until a dough forms.

On a lightly floured surface, roll out the dough into a rectangle about ¼ inch thick. Spread a thin layer of coconut oil on top and sprinkle with brown sugar, cinnamon, and raisins or nuts if using.

Starting from one edge, carefully roll the dough into a log shape. Slice the log into 1-inch thick pieces and place them in the prepared baking dish.

Bake for 25-30 minutes, or until the cinnamon rolls are golden and cooked through.

While the rolls are baking, prepare the maple tahini drizzle. In a small bowl, whisk together tahini, maple syrup, warm water, and sea salt until smooth. Adjust the consistency by adding more water if necessary.

Once the cinnamon rolls are done, remove them from the oven and let them cool for a few minutes. Drizzle the maple tahini mixture generously over the warm rolls.
