The first time I baked raisin bread, I was in my grandmother’s cozy kitchen, the smell of cinnamon and sugar swirling around me like a warm hug. She taught me that each loaf carries love and memories, and this one is no different. Packed with the goodness of whole grains and the sweetness of nature’s candy, this wholesome cinnamon raisin bread not only tastes divine but also nourishes the body and soul.
This version incorporates superfoods like chia seeds and whole wheat flour, making it a deliciously healthy choice for breakfast or a delightful snack any time of the day.
Ingredients
- 2 cups whole wheat flour
- 1 cup all-purpose flour
- 1/4 cup chia seeds
- 1/4 cup brown sugar (or coconut sugar)
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1 cup warm almond milk (or any milk of your choice)
- 1/4 cup unsweetened applesauce
- 1/4 cup melted coconut oil (or butter)
- 1 cup raisins
Instructions
Begin your baking journey by activating the yeast. In a small bowl, combine the warm almond milk and the yeast. Let it sit for about 5-10 minutes until it becomes frothy. This ensures your bread will rise beautifully.
In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, chia seeds, brown sugar, cinnamon, and salt. Create a well in the center of the dry ingredients.
Once the yeast is activated, pour it into the well along with the applesauce and melted coconut oil. Stir the mixture with a wooden spoon until a shaggy dough forms.
Transfer the dough to a floured surface and knead for about 7-10 minutes until the dough is smooth and elastic. If it feels too sticky, add a little more flour, a tablespoon at a time.
Shape the dough into a ball and place it in a greased bowl, covering it with a damp cloth. Let it rise in a warm place for about 1 hour, or until it has doubled in size.
After the dough has risen, gently punch it down to release the air. Fold in the raisins until evenly distributed.
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
Shape the dough into a loaf and place it in the prepared pan. Cover it again with the damp cloth and let it rise for an additional 30 minutes.
Once the dough has risen, bake it in the preheated oven for 30-35 minutes, or until the top is golden brown and the bread sounds hollow when tapped.
Remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Slice and enjoy this wholesome cinnamon raisin bread toasted with a bit of nut butter or simply on its own. Each bite is a delicious reminder of love, warmth, and the joy of baking.
