Ingredients

  • 4 large eggs
  • 100g (1/2 cup) granulated sugar
  • 100g (3/4 cup) all-purpose flour
  • 30g (1/4 cup) cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 30g (2 tbsp) unsalted butter, melted
  • 200ml (3/4 cup) heavy cream
  • 50g (1/4 cup) powdered sugar
  • 1 tsp vanilla extract
  • Extra cocoa powder or powdered sugar for dusting

Instructions

Prepare your baking sheet by lining it with parchment paper and preheating your oven to 200°C (400°F).

In a large mixing bowl, whisk the eggs and granulated sugar together until the mixture is pale and fluffy, about 5 minutes. This aeration is key to a light roll.

In another bowl, sift together the all-purpose flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture, being careful not to deflate the batter.

Once incorporated, drizzle in the melted butter and fold it in gently until combined. The batter should be smooth and airy.

Pour the batter onto the prepared baking sheet, spreading it evenly into the corners. Bake in the preheated oven for 10-12 minutes, or until the cake springs back when lightly touched.

While the cake is baking, prepare a clean kitchen towel by sprinkling it with cocoa powder or powdered sugar. Once the cake is done, immediately invert it onto the towel. Carefully peel off the parchment paper.

Starting from one short end, roll the cake up with the towel inside to help it keep its shape. Allow it to cool completely in this rolled position.

Meanwhile, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form. Be careful not to overwhip; you want a smooth, spreadable texture.

Once the cake has cooled, unroll it gently and spread the whipped cream evenly across the surface. Roll the cake back up without the towel, this time forming the Swiss roll.

Transfer the roll to a serving plate, seam side down. Dust the top with cocoa powder or powdered sugar for a finishing touch.

Slice into pieces and serve to your family and friends. Enjoy the delightful flavors and the smiles that come with each bite!
