  • 1 cup corn syrup
  • 1/2 cup water
  • 1 teaspoon flavor extract (such as peppermint, cherry, or lemon)
  • 1/4 teaspoon food coloring (optional)
  • Powdered sugar (for dusting)

Instructions

Start by preparing your workspace. Lay out a baking sheet lined with parchment paper, which will be used for cooling the candy later.

In a medium-sized heavy saucepan, combine the granulated sugar, corn syrup, and water. Stir the mixture over medium heat until the sugar has completely dissolved.

Once the sugar is dissolved, stop stirring and increase the heat to high. Allow the mixture to boil without stirring until it reaches the hard crack stage (300°F or 149°C) on a candy thermometer. This usually takes about 10-15 minutes.

As the candy reaches the desired temperature, remove the saucepan from the heat. Allow it to cool for a minute, then carefully stir in your chosen flavor extract and food coloring, if using. Be cautious as the mixture will bubble and steam.

Quickly pour the hot candy mixture onto the prepared baking sheet. Use a spatula to spread it evenly, but be careful as the candy will be extremely hot.

Let the candy cool completely at room temperature, which usually takes about 1-2 hours. Once cooled, dust your hands and a cutting surface with powdered sugar to prevent sticking.

Break the hard candy into small pieces or use a sharp knife to cut it into squares. If desired, toss the pieces in a little powdered sugar to prevent them from sticking together.
