Ingredients

  • 1 cup all-purpose flour
  • 1 cup almond milk (or any plant-based milk)
  • 1/2 cup coconut sugar (or any natural sweetener)
  • 1/4 cup vegetable oil
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup coconut whipped cream (store-bought or homemade)
  • Powdered sugar for dusting (optional)

Instructions

Begin by preheating your oven to 350°F (175°C) and lining a 9×13 inch baking pan with parchment paper, ensuring it hangs over the edges for easy removal later.

In a large mixing bowl, whisk together the flour, coconut sugar, baking powder, and salt until well combined. In a separate bowl, mix the almond milk, vegetable oil, and vanilla extract.

Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay.

Pour the batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for 20-25 minutes, or until the sponge is lightly golden and a toothpick inserted in the center comes out clean.

Once baked, remove the sponge from the oven and let it cool in the pan for about 5 minutes. Carefully lift the sponge out using the parchment paper and transfer it to a cooling rack to cool completely.

While the sponge is cooling, prepare the filling. In a bowl, gently toss the mixed berries with a tablespoon of coconut sugar to enhance their sweetness. If you prefer a smoother filling, you can blend the berries into a puree.

Once the sponge is completely cooled, spread the coconut whipped cream evenly over the surface. Then, sprinkle the sweetened mixed berries on top of the cream.

Starting from one end, carefully roll the sponge tightly into a log shape, using the parchment paper to help guide it. Once rolled, gently press the ends to secure the filling inside.

Transfer the rolled sponge to a serving platter, seam side down. If desired, dust the top with powdered sugar for an elegant finish.

Slice into rounds and serve immediately, or refrigerate for up to an hour to set. Enjoy your Vegan Berry Bliss Sponge Roll, which is sure to impress both vegans and skeptics alike!
