Start by placing the chopped dark chocolate in a heatproof bowl. In a saucepan, heat the heavy cream and butter over medium heat until it just begins to simmer. Remove from the heat as soon as it bubbles.

Pour the hot cream mixture over the chopped chocolate. Let it sit for a minute to soften the chocolate, then gently stir until smooth and glossy. Make sure there are no lumps remaining.

Add the dark rum and a pinch of sea salt to the chocolate mixture, stirring until fully incorporated. Taste the mixture and adjust the rum if you prefer a stronger flavor.

Cover the bowl with plastic wrap and refrigerate for about 2 hours, or until the mixture is firm enough to scoop.

Once chilled, use a melon baller or a small spoon to scoop out portions of the truffle mixture. Roll them quickly between your palms to form smooth balls. If the mixture gets too soft, return it to the fridge for a few minutes.

Place the cocoa powder in a shallow dish. Roll each truffle in the cocoa powder to coat evenly. Shake off any excess.
