Ingredients

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • ½ cup fresh key lime juice (or regular lime juice)
  • 1 teaspoon lime zest (optional, for garnish)
  • Whipped cream, for serving

Instructions

Preheat your oven to 350°F (175°C).

In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.

Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie pan to form the crust.

Bake the crust in the preheated oven for 8–10 minutes, until it is slightly golden. Remove from the oven and let it cool.

In another bowl, whisk together the egg yolks and sweetened condensed milk until smooth. Gradually add the key lime juice and mix until well combined.

Pour the filling into the cooled crust, spreading it evenly.

Bake the pie for an additional 10 minutes. Remove it from the oven and let it cool to room temperature before refrigerating for at least 3 hours, or until set.
