Ingredients
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsweetened cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- 1 cup almond milk (or any plant-based milk)
- 1/3 cup vegetable oil
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- 1 package (12 oz) silken tofu, drained
- ½ cup maple syrup
- 1 tsp vanilla extract (for the frosting)
- 2 cups chocolate sandwich cookies (vegan)
- 1 cup gummy worms (optional, for decoration)
- Fresh mint leaves (for garnish, optional)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
In a large mixing bowl, combine the flour, sugar, cocoa powder, baking soda, and salt. Mix well to ensure all dry ingredients are evenly distributed.
In a separate bowl, whisk together the almond milk, vegetable oil, apple cider vinegar, and 1 tsp vanilla extract until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to over-mix.
Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
While the cake is cooling, prepare the frosting. In a blender or food processor, combine the silken tofu, maple syrup, and 1 tsp vanilla extract. Blend until smooth and creamy. Taste and adjust sweetness if needed.
Once the cake is completely cooled, slice it in half horizontally to create two layers. Spread a generous amount of the tofu frosting between the layers and on the top and sides of the cake.
Next, crush the chocolate sandwich cookies into fine crumbs using a food processor or by placing them in a sealed plastic bag and crushing them with a rolling pin. Coat the frosted cake generously with the cookie crumbs, pressing gently to adhere.
For the final touch, decorate the top of the cake with gummy worms and fresh mint leaves for a fun and festive look!
Slice, serve, and enjoy your decadent vegan dirt cake! Watch as your guests delight in the rich flavors and playful presentation, proving that plant-based desserts can be indulgent and enjoyable for everyone!
