Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Using a pastry cutter or your fingertips, cut the cold butter into the flour mixture until it resembles coarse crumbs.

If you’re adding dried fruit or chocolate chips, stir them into the mixture now.

In another bowl, combine the heavy cream and vanilla extract. Pour this mixture into the dry ingredients and stir until just combined. Be careful not to overmix; the dough should be slightly sticky.

Turn the dough out onto a lightly floured surface and gently knead it just until it holds together, about 3-4 times. Pat the dough into a circle about 1-inch thick.

Cut the circle into 8 wedges and place them on the prepared baking sheet, leaving space between each scone.
