The idea of vegetable purees took shape, each one a different melody in a culinary symphony. This recipe encompasses a medley of flavors, perfect for a light meal, a dip, or a vibrant addition to any plate.

Ingredients

– 2 medium carrots, diced
– 1 cup of broccoli florets
– 1 medium zucchini, chopped
– 1 medium sweet potato, peeled and cubed
– 1/2 cup of coconut milk
– 1 tablespoon of olive oil
– 1 teaspoon of fresh thyme leaves
– 1 tablespoon of lemon juice
– Salt and pepper to taste
– Optional: a pinch of cayenne pepper for a kick

Instructions

Begin by preparing your vegetables. The sweet potato will take the longest to cook, so place it in a pot of boiling salted water and cook for about 10 minutes, until tender. Add the diced carrots and broccoli florets to the pot, allowing them to join the sweet potato for the final 5 minutes of cooking.

While the root vegetables are cooking, in a separate pan, heat the olive oil over medium heat. Toss in the chopped zucchini and sauté for around 5 minutes, until it softens but retains its bright color.

Once the vegetables are cooked, drain them and transfer to a food processor. Add the sautéed zucchini, coconut milk, fresh thyme, lemon juice, and season with salt, pepper, and cayenne if you like a bit of heat. Puree the mixture until smooth and creamy, adjusting the consistency with additional coconut milk or a splash of vegetable broth if necessary.
