It was a rainy afternoon when inspiration struck. I was watching my daughter try to make a fluffy omelet, but somehow it morphed into a scrambled mess. While we laughed at our culinary adventure, I remembered a dish I once had at a quaint café in the countryside—a delightful cloud of egg whites enveloping a golden yolk. That memory sparked an idea: why not elevate this classic dish with a touch of elegance and a hint of truffle? Thus, “Eggs in Cloud with a Twist of Truffle” was born, perfect for breakfast or brunch, and it always impresses guests!

Ingredients

4 large eggs
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1/4 cup grated Parmesan cheese
2 tablespoons truffle oil
Fresh chives, finely chopped, for garnish
Microgreens, for garnish (optional)

Instructions

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent the eggs from sticking.

Separate the egg whites from the yolks, placing the whites in a large mixing bowl and the yolks in separate small bowls. Be careful not to let any yolk mix with the whites, as it will prevent them from whipping properly.

Using an electric mixer, beat the egg whites on medium-high speed until soft peaks form. Gradually add in the sea salt and continue beating until stiff peaks form, approximately 3-4 minutes. Gently fold in the grated Parmesan cheese, being careful not to deflate the mixture.

Using a spatula, spoon the fluffy egg white mixture onto the prepared baking sheet, creating small nests with a well in the center for the yolk. Ensure the nests are well-formed, as they will hold the yolks.

Carefully place one egg yolk into each nest. Drizzle the truffle oil over the top of the nests, allowing the rich aroma to waft through your kitchen.

Bake in the preheated oven for 12-15 minutes, or until the egg whites are golden and the yolks are set to your desired doneness. For a slightly runny yolk, aim for around 12 minutes.

Once baked, remove from the oven and let cool for a minute. Garnish with freshly chopped chives and, if desired, a sprinkle of microgreens for an extra touch of elegance.

Serve immediately, and watch as your guests marvel at the delightful presentation and the enticing aroma of truffle that fills the air. This dish not only looks stunning but also brings a burst of flavor that is simply unforgettable. Enjoy the laughter and smiles that follow, just like that rainy afternoon with my daughter!
