There’s a certain magic that fills the air when the scent of lavender wafts through the kitchen. A few summers ago, I stumbled upon a quaint lavender farm tucked away in the hills. The owner shared her secrets of infusing culinary delights with lavender. Inspired by her passion, I ventured home to create a recipe that marries the delicate floral notes of lavender with the sweetness of honey, all wrapped in flaky puff pastry. The result is a delightful treat that’s perfect for afternoon tea or a whimsical brunch with friends.

Ingredients

1 sheet of puff pastry (thawed)
2 tablespoons dried culinary lavender
1/4 cup honey
1 tablespoon lemon juice
1 egg (beaten, for egg wash)
Powdered sugar (for dusting)
Fresh lavender sprigs (for garnish, optional)

Instructions

Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to ensure a perfect bake without sticking.

In a small saucepan over low heat, combine the honey, dried lavender, and lemon juice. Stir gently until the mixture is warm and the lavender has infused its flavor into the honey. Remove from heat and let it cool slightly.

Roll out your thawed puff pastry on a lightly floured surface to smooth out any creases, then cut it into equal squares, about 4 inches per side. You can also use a cookie cutter for a more whimsical shape if you prefer.

Place a generous teaspoon of the lavender honey mixture in the center of each pastry square. Be careful not to overfill them, as this may cause the pastries to burst open during baking.

Fold the corners of each pastry square towards the center, creating a little pocket. Pinch the edges together gently to seal them tightly. Brush the tops with the beaten egg to give them a beautiful golden finish.

Transfer the pastries to the prepared baking sheet and bake for about 15-20 minutes, or until they are puffed up and golden brown. The aroma of lavender and honey wafting through your kitchen will be irresistible!

Once baked, remove the pastries from the oven and allow them to cool for a few minutes. Dust them lightly with powdered sugar for a touch of sweetness.

Serve these whimsical lavender honey puff pastries warm, garnished with fresh lavender sprigs if desired. Perfect for sharing or savoring all on your own, they are sure to bring a sprinkle of joy to your day!
