Traveling through the vibrant streets of India, I was captivated by the enticing aromas wafting from street vendors. One of my favorite treats was the crispy, golden churros, often enjoyed with a hint of spice and sweetness. Inspired by my adventures, I created a fusion dessert that combines the traditional fried dough of churros with a unique Indian twist. These Spicy Sweet Indian Churros, coated in fragrant cardamom sugar, are a delightful treat for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cardamom
  • 2 tablespoons unsalted butter, melted
  • ½ cup water
  • 1 teaspoon vanilla extract
  • Oil for frying
  • ½ cup sugar (for coating)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

Instructions

Start by preparing the dough. In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, salt, and ground cardamom. Mix well to ensure the dry ingredients are evenly distributed.

In a small saucepan, combine the water, melted butter, and vanilla extract. Heat over medium heat until the mixture starts to come to a gentle boil.

Once boiling, pour the hot liquid into the dry ingredients. Stir with a wooden spoon until the mixture comes together into a cohesive dough. It should be smooth and slightly sticky.

Let the dough cool for a few minutes, then transfer it to a piping bag fitted with a star-shaped nozzle. This will give your churros their signature ridged shape.

Heat the oil in a deep pan or fryer to 350°F (175°C). Carefully pipe the dough into the hot oil, cutting it to your desired length with scissors. Fry the churros in batches, making sure not to overcrowd the pan.

Cook the churros for about 2-3 minutes on each side or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.

While the churros are still warm, prepare the cardamom sugar coating. In a shallow dish, combine the sugar, ground cinnamon, and nutmeg. Toss the churros in the sugar mixture until they are well coated.
