As the sun dipped below the horizon, casting a golden hue across the fields of wildflowers, my grandmother would gather us around her kitchen table. The air filled with the sweet aroma of toasted nuts and honey, a precursor to the delightful treat we were all waiting for—halva. This ancient confection, rich in tradition and flavor, always brought our family together. Today, I am excited to share a gourmet twist on this classic dessert, incorporating the vibrant flavors of pistachios and the warm notes of honey.
Ingredients
– 1 cup tahini (sesame seed paste)
– 1 cup honey
– 1 cup granulated sugar
– 1/2 cup water
– 1/2 teaspoon vanilla extract
– 1/4 teaspoon salt
– 1 cup pistachios, shelled and roughly chopped
– 1/4 teaspoon ground cardamom (optional)
– Extra pistachios for garnish
Instructions
Prepare a square baking dish (8×8 inches) by lining it with parchment paper, allowing some overhang for easy removal later.
In a medium saucepan, combine the sugar, water, and salt. Heat over medium heat, stirring until the sugar dissolves completely. Once dissolved, stop stirring and allow the mixture to come to a gentle boil. Use a candy thermometer to monitor the temperature; you’re aiming for about 240°F (soft ball stage).
While the syrup is cooking, in a large mixing bowl, combine tahini, honey, vanilla extract, and cardamom (if using). Mix until well combined and smooth.
Once the syrup reaches the desired temperature, carefully pour it into the tahini mixture while stirring vigorously. The mixture will bubble and steam, so be cautious! Continue mixing until the syrup is fully incorporated and the mixture thickens to a play-dough-like consistency.
Fold in the chopped pistachios, ensuring they are evenly distributed throughout the halva mixture.
Transfer the mixture into the prepared baking dish, spreading it out evenly with a spatula. Press down firmly to compact it, ensuring it holds its shape once set.
Allow the halva to cool at room temperature for about 2 hours. Once set, lift it out of the dish using the parchment overhang. Cut into squares or rectangles, and garnish with additional chopped pistachios on top for a beautiful presentation.
Serve your honey-infused pistachio halva as a delightful dessert or a sweet snack. Each bite will transport you to that sunlit kitchen, filled with laughter and the comforting embrace of family traditions. Enjoy!
