Indulge in these rich, fudgy brownies that challenge traditional dessert norms by using avocado and black beans for a moist texture and added nutrition. Perfect for satisfying your sweet tooth with a twist!
Ingredients
- 1 ripe avocado, mashed
- 1 cup canned black beans, rinsed and drained
- 1/2 cup maple syrup or agave nectar
- 1/4 cup almond butter (or any nut/seed butter of choice)
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (dairy-free)
- Optional: chopped nuts or seeds for topping
Instructions
Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
In a food processor, combine the mashed avocado and black beans, blending until smooth and creamy.
Add the maple syrup, almond butter, cocoa powder, vanilla extract, baking powder, and salt to the food processor. Blend until all ingredients are fully incorporated and you have a thick, smooth batter.
Fold in the dark chocolate chips until evenly distributed throughout the batter.
Pour the brownie batter into the prepared baking pan, smoothing the top with a spatula. If desired, sprinkle additional chocolate chips or chopped nuts on top for an extra crunch.
Bake in the preheated oven for 20-25 minutes, or until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).
Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Once cool, cut into squares and enjoy your decadent, guilt-free treat!
