Inspired by my travels through Japan, I discovered the delightful world of mochi. The chewy texture and subtly sweet flavors captivated me, but what truly struck me was the balance of tradition and health in each bite. This recipe for Matcha Green Tea Mochi with Adzuki Bean Filling not only pays homage to that experience but also incorporates the nutritional benefits of matcha and adzuki beans. Let’s embark on this culinary adventure!

Ingredients

  • 1 cup sweet rice flour (mochi flour)
  • 1/4 cup granulated sugar
  • 1 cup water
  • 2 tablespoons matcha green tea powder
  • 1/2 cup cooked adzuki beans (sweetened with a bit of sugar or honey)
  • Cornstarch for dusting
  • Powdered sugar for dusting (optional)

Instructions

Begin by preparing the adzuki bean filling. If you haven’t yet cooked the adzuki beans, rinse and boil them until soft. Sweeten to taste with sugar or honey, and set aside to cool.

In a mixing bowl, combine the sweet rice flour, granulated sugar, and matcha green tea powder. Mix until well-combined, ensuring the matcha is evenly distributed throughout the flour.

Gradually add the water to the dry ingredients, stirring continuously to prevent lumps. The mixture should be smooth and slightly thick.

Transfer the mixture to a microwave-safe dish. Cover it with plastic wrap, leaving a small vent for steam to escape. Microwave the mixture on high for 1 minute. Remove and stir, then cover and microwave for another minute. Repeat this process one more time, cooking for a total of 3 minutes. The mochi should be thick and slightly translucent.

Once cooked, lightly dust a clean surface with cornstarch. Carefully transfer the mochi onto the surface. While it’s still warm (but manageable), dust your hands with cornstarch and knead the mochi gently to incorporate some of the cornstarch and prevent sticking.

Divide the mochi into equal portions, about 1.5 inches in diameter. Flatten each piece into a disc and place a small spoonful of the sweetened adzuki beans in the center. Carefully fold the edges over the filling, pinching them to seal the mochi. Roll it into a ball shape, ensuring the filling is enclosed.

Repeat this process until all the mochi and filling are used. Dust each finished mochi with powdered sugar and more cornstarch to keep them from sticking together.

Allow the mochi to cool completely at room temperature. These chewy delights can be enjoyed immediately or stored in an airtight container in the refrigerator for up to a week.

Enjoy your Matcha Green Tea Mochi with Adzuki Bean Filling as a delightful snack, dessert, or even a healthy treat during your afternoon tea. Each bite is a little piece of Japan, filled with flavor and nutrition!
