There was a time when I thought indulging in desserts meant compromising on my health goals. But then I discovered the magic of superfoods, and my sweet tooth was transformed into a source of nourishment. One particular afternoon, while experimenting in the kitchen, I created these delightful Nutty Superfood Pralines. They not only satisfy cravings but also pack a punch of nutrients that make me feel good inside and out. Each bite is a reminder that healthy desserts can be delicious and decadent.

Ingredients

  • 1 cup raw pecans
  • 1 cup Medjool dates, pitted
  • 1/4 cup unsweetened shredded coconut
  • 2 tablespoons cacao nibs
  • 1 tablespoon almond butter
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • Optional: 1 tablespoon maple syrup for extra sweetness

Instructions

Begin by placing the raw pecans in a food processor. Pulse until they reach a coarse meal consistency, being careful not to over-process them into a butter.

Add the pitted Medjool dates to the food processor and continue to blend until the mixture becomes sticky and holds together when pressed. If it’s too dry, add a tablespoon of maple syrup, if desired.

Next, incorporate the shredded coconut, almond butter, vanilla extract, and a pinch of sea salt. Pulse again until everything is well combined, and the mixture resembles a thick dough.

Once the mixture is ready, fold in the cacao nibs for a delightful crunch and an extra boost of antioxidants.

Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls. You can adjust the size to your preference, but I recommend keeping them around one inch in diameter.

Place the rolled pralines on a parchment-lined baking sheet. If you like, you can roll some of the balls in extra shredded coconut for added texture and flavor.

Refrigerate the pralines for at least 30 minutes to firm up. Once set, they’re ready to be enjoyed! Store any leftovers in an airtight container in the refrigerator for up to a week (if they last that long!).

These Nutty Superfood Pralines have become a go-to treat in my household, perfect for satisfying sweet cravings without the guilt. Each bite is a testament to how desserts can be both healthy and heavenly. Enjoy your culinary adventure!
