Growing up, my grandmother had a special knack for making candies that filled our home with warmth and sweetness. The rich aroma of melting sugar and nuts would wrap around us like a cozy blanket, and we could hardly wait for the first taste. Inspired by those cherished memories, I’ve created a modern twist on her classic caramel candies—Maple Pecan Caramel Candy Bites. These delightful treats combine the earthy sweetness of maple syrup with the crunch of pecans, perfect for sharing with loved ones or savoring all on your own.

Ingredients

  • 1 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1/2 cup heavy cream
  • 1/4 cup pure maple syrup
  • 1/2 teaspoon sea salt
  • 1 cup chopped pecans, toasted
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for dusting)

Instructions

  • Prepare an 8×8-inch baking pan by lining it with parchment paper, leaving some overhang for easy removal later. Lightly grease the parchment with a little butter or cooking spray.
  • In a medium saucepan over medium heat, combine the granulated sugar and butter. Stir until the mixture starts to melt and become smooth, about 3-4 minutes.
  • Slowly pour in the heavy cream and maple syrup, stirring continuously. Be cautious as the mixture may bubble up. Keep stirring until it reaches a gentle boil.
  • Continue to cook the mixture for about 5-7 minutes, or until it thickens to a soft ball stage (around 240°F or 115°C). You can test this by dropping a small amount into a glass of cold water; it should form a soft ball that holds its shape.
  • Remove the saucepan from heat and stir in the sea salt, vanilla extract, and toasted pecans. Mix until well combined.
  • Pour the caramel mixture into the prepared baking pan, spreading it evenly. Allow it to cool at room temperature for about 2 hours, or until set.
  • Once the caramel is firm, lift it out of the pan using the parchment overhang. Place it on a cutting board and cut it into bite-sized squares or rectangles.
  • Dust the pieces lightly with powdered sugar to prevent them from sticking together. Store in an airtight container at room temperature for up to two weeks (if they last that long!).

These Maple Pecan Caramel Candy Bites are not just a treat; they’re a sweet reminder of family gatherings and the love that binds us. With each bite, you’ll experience the warmth of nostalgia and the joy of creating new memories. Enjoy!
