When I first embarked on my journey toward a healthier lifestyle, I often found myself craving snacks that were both satisfying and nutritious. One day, while rummaging through my pantry, I stumbled upon a variety of seeds and nuts. Inspired, I decided to create a granola bar that not only catered to my sweet tooth but also packed a punch of health benefits. These Nutty Superfood Granola Bars quickly became my go-to snack, perfect for on-the-go energy or a wholesome treat at home.
Ingredients
- 1 cup rolled oats
- 1/2 cup almond butter (or any nut butter of your choice)
- 1/4 cup honey or maple syrup
- 1/2 cup chopped nuts (almonds, walnuts, or pecans)
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1/4 cup dried cranberries or raisins
- 1/4 cup shredded coconut (unsweetened)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
Begin by preheating your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, allowing some overhang for easy removal later.
In a large mixing bowl, combine the rolled oats, chopped nuts, pumpkin seeds, sunflower seeds, dried cranberries, shredded coconut, cinnamon, and a pinch of salt. Stir well to combine all the dry ingredients.
In a separate microwave-safe bowl, combine the almond butter and honey (or maple syrup). Microwave for about 30 seconds until slightly melted, then stir in the vanilla extract.
Pour the almond butter mixture over the dry ingredients, and mix thoroughly until everything is evenly coated. The mixture should be sticky and hold together when pressed.
Transfer the mixture to the prepared baking pan, pressing it down firmly with a spatula to create an even layer. Make sure to pack it tightly to ensure the bars hold their shape once baked.
Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown. Keep an eye on them to prevent over-baking.
Once baked, remove from the oven and let it cool in the pan for about 10 minutes. Then, use the parchment overhang to lift the bars out of the pan and allow them to cool completely on a wire rack.
Once cool, cut into bars or squares as desired. Store them in an airtight container at room temperature for up to a week or in the fridge for longer freshness.
These Nutty Superfood Granola Bars are not only a delightful snack but also a reminder of how simple ingredients can come together to create something truly nourishing. Each bite bursts with flavor and energy, making them perfect for busy days or post-workout recovery!
