These Vegan Snickerdoodles are a delightful twist on the classic cookie that everyone loves. Ingredients:
- 1 cup coconut oil, solid but soft (not melted)
- 1 cup brown sugar
- 1/4 cup almond milk (or any plant-based milk)
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup granulated sugar (for rolling)
- 2 teaspoons ground cinnamon (for rolling)
Instructions:
Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prepare for baking.
In a mixing bowl, cream together the solid coconut oil and brown sugar until the mixture is smooth and fluffy. This should take about 2-3 minutes. Add in the almond milk and vanilla extract, mixing until well combined.
In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay!
In a small bowl, combine the granulated sugar and ground cinnamon. This will be your rolling mixture for the cookies.
Using a tablespoon or cookie scoop, portion out the dough and roll it into balls, about 1 inch in size. Roll each ball in the cinnamon-sugar mixture until fully coated, then place them on the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look a bit underbaked, but they will continue to firm up as they cool.
