As I sat in my cozy kitchen, the aroma of warm honey and toasted nuts filled the air, reminding me of my childhood visits to the local candy shop. Those visits would always end with a small piece of nougat, a sweet treat that sparked joy in my heart. Today, I’ve transformed that nostalgic delight into a healthier version, incorporating superfoods to create a Nutty Superfood Nougat Bliss that not only satisfies your sweet tooth but also nourishes your body.

Ingredients

  • 1 cup raw almonds, chopped
  • 1 cup raw walnuts, chopped
  • 1 cup puffed quinoa
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil
  • 1/4 cup almond butter
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • Optional: 1/4 cup dried cranberries or goji berries for added sweetness and color

Instructions

Begin by preparing a square baking dish (8×8 inches) by lining it with parchment paper. This will make it easy to remove the nougat later.

In a large mixing bowl, combine the chopped almonds, walnuts, and puffed quinoa. If you’re using dried cranberries or goji berries, add them to the mixture as well.

In a small saucepan over low heat, combine the honey (or maple syrup), coconut oil, almond butter, vanilla extract, and sea salt. Stir continuously until the mixture is smooth and well combined. This process should take about 5-7 minutes.

Once the mixture is ready, pour it over the nut and quinoa mixture. Stir until all the dry ingredients are well coated with the sticky mixture. This is where the magic happens – the nuts and quinoa will soak in all that sweet goodness.

Transfer the nougat mixture into the prepared baking dish. Use a spatula to press it down firmly and evenly. The more compact the mixture, the better it will hold together once set.

Refrigerate the nougat for at least 2 hours or until it’s firm. After it has set, lift it out of the baking dish using the parchment paper and place it on a cutting board.

Cut the nougat into small squares or rectangles, depending on your preference. Store the pieces in an airtight container in the fridge for up to two weeks, if they last that long!

Enjoy this Nutty Superfood Nougat Bliss as a delightful snack or a healthier dessert option. Each bite is filled with crunchy nuts, chewy sweetness, and a hint of nostalgia that will remind you of carefree days gone by.
