Elevate your snack game with these delightful herb-infused sweet potato breadsticks. Combining the natural sweetness of sweet potatoes with aromatic herbs and a hint of nutritional yeast, these breadsticks are a delicious vegan treat that defies traditional expectations.
Ingredients
- 1 medium sweet potato (about 1 cup, mashed)
- 1 ½ cups all-purpose flour (or gluten-free flour blend)
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 2 tablespoons nutritional yeast
- 2 tablespoons olive oil
- ¼ cup almond milk (or any plant-based milk)
- Extra olive oil for brushing
- Fresh herbs for garnish (optional)
Instructions
Start by preheating your oven to 425°F (220°C) and lining a baking sheet with parchment paper.
Peel and chop the sweet potato, then boil it in a pot of water until tender (about 15 minutes). Drain and mash it until smooth. Allow it to cool slightly.
In a large mixing bowl, combine the all-purpose flour, baking powder, salt, garlic powder, oregano, thyme, and nutritional yeast. Mix well to ensure even distribution of the dry ingredients.
Add the mashed sweet potato, olive oil, and almond milk to the dry ingredients. Stir until a dough begins to form. If the dough is too sticky, gradually add more flour until it becomes manageable.
Lightly flour a clean surface and turn the dough out. Knead it gently for a minute to bring it together. Roll the dough into a rectangle about ½ inch thick.
Using a sharp knife or pizza cutter, slice the rectangle into strips approximately 1 inch wide. Transfer the strips to the prepared baking sheet, spacing them out evenly.
Brush the tops of the breadsticks lightly with olive oil and sprinkle with additional herbs or nutritional yeast if desired.
Bake in the preheated oven for 15-20 minutes or until the breadsticks are golden brown and slightly crispy on the edges.
Remove from the oven and allow them to cool slightly before serving. For an extra touch, garnish with fresh herbs.
Enjoy these herb-infused sweet potato breadsticks warm as a snack or alongside your favorite vegan dips!
