Delight in the traditional German cookie, Springerle, reimagined with a vegan twist using aquafaba for that perfect texture, and infused with aromatic spices for an unconventional flavor profile. These beautifully molded cookies are perfect for any festive occasion or just to enjoy with your afternoon tea!

Ingredients

  • 2 cups all-purpose flour
  • 1 cup powdered sugar
  • 1/2 cup aquafaba (the liquid from canned chickpeas)
  • 1/4 cup almond meal
  • 2 tablespoons anise seeds
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • Extra powdered sugar for dusting

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a mixing bowl, combine the powdered sugar, aquafaba, and vanilla extract. Whisk until the mixture is smooth and frothy, resembling a light meringue.

In another bowl, whisk together the flour, almond meal, baking powder, anise seeds, ground cardamom, and salt. This blend will create the aromatic base for your cookies.

Gradually fold the dry ingredients into the aquafaba mixture, stirring gently until a dough forms. You want it to be cohesive but not overly sticky. If it feels too wet, add a little more flour.

Once the dough is ready, wrap it in plastic wrap and let it rest in the refrigerator for at least 30 minutes. This will help the flavors meld together and make the dough easier to handle.

After resting, roll out the dough on a lightly floured surface to about 1/4 inch thick. Use a springerle mold or cookie cutter to cut out shapes, pressing firmly to ensure the designs are well defined.

Place the molded cookies on the prepared baking sheet, leaving some space between them. Dust lightly with powdered sugar to enhance their appearance and flavor.

Bake for 10-12 minutes, or until the edges are lightly golden but the cookies remain soft in the center. They will firm up as they cool. Allow the cookies to cool completely on the baking sheet.

Once cooled, store in an airtight container. These cookies can be enjoyed immediately, but they improve in flavor after a day or two as the spices develop.

Enjoy these unique spiced anise springerle with a cup of tea or coffee, and impress your friends with your creative take on a classic treat!
