There was a time when I thought indulgence and health were worlds apart. One evening, while experimenting in my kitchen, the aroma of freshly baked cookies filled the air, and I was whisked back to my childhood. I wanted to create a cookie that not only satisfied my sweet tooth but also fueled my body with nutrients. Thus, the Choco-Chia Superfood Cookies were born—a delightful balance of decadence and health!
Ingredients
- 1 cup almond flour
- 1/2 cup rolled oats
- 1/4 cup chia seeds
- 1/2 cup coconut sugar
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup coconut oil, melted
- 1/4 cup almond milk (or any plant-based milk)
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips (preferably 70% cacao or higher)
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the almond flour, rolled oats, chia seeds, coconut sugar, cocoa powder, baking soda, and salt. Whisk them together until well blended.
In a separate bowl, mix the melted coconut oil, almond milk, and vanilla extract until combined.
Pour the wet ingredients into the dry mixture and stir until a dough forms. Gently fold in the dark chocolate chips, ensuring they are evenly distributed throughout the dough.
Using a tablespoon, scoop out portions of the dough and roll them into balls. Place them on the prepared baking sheet, spaced about 2 inches apart. Gently flatten each cookie with the palm of your hand.
Bake in the preheated oven for 10-12 minutes, or until the edges are slightly firm. The centers may appear soft, but they will firm up as they cool.
Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
These Choco-Chia Superfood Cookies are not just a treat; they are a powerhouse of nutrition. Packed with fiber from the chia seeds and oats, healthy fats from the almond flour and coconut oil, and antioxidants from the dark chocolate, they remind me that healthy eating can be both enjoyable and fulfilling.
