Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the coconut milk, coconut sugar, applesauce, and vanilla extract. Whisk until well blended and the sugar is mostly dissolved.
In another bowl, sift together the all-purpose flour, baking powder, salt, lemon zest, lime zest, and turmeric powder. Stir to combine.
Gradually add the dry ingredients into the wet mixture, folding gently to avoid overmixing. The batter should be thick yet pourable.
Using a spoon or a small ice cream scoop, drop spoonfuls of the batter onto the prepared baking sheet, leaving space between each drop to allow for spreading.
