Inspired by my travels to Southeast Asia, where tropical fruits burst with flavor, I’ve created this delightful Coconut-Lychee Popsicle. Lychee, with its fragrant sweetness, pairs beautifully with creamy coconut and a zesty hint of lime, transporting you to a paradise of flavor with every bite.
### Ingredients
– 1 can (13.5 oz) coconut milk
– 1 cup lychee fruit, peeled and pitted (fresh or canned)
– 1/4 cup honey or agave syrup (adjust based on sweetness preference)
– Juice of 1 lime
– Zest of 1 lime
– A pinch of sea salt
– Fresh mint leaves for garnish (optional)
### Instructions
Combine the coconut milk, lychee fruit, honey or agave syrup, lime juice, lime zest, and sea salt in a blender. Blend until smooth and creamy, ensuring that the lychee is well incorporated with the coconut milk.
Taste the mixture and adjust the sweetness if desired by adding more honey or agave syrup.
Pour the mixture evenly into popsicle molds, leaving a little space at the top for expansion as they freeze. Insert the popsicle sticks and carefully place the molds in the freezer.
Freeze for at least 6 hours or until solid. For a quicker freeze, you can place them in the coldest part of your freezer.
Once fully frozen, run the outside of the molds under warm water for a few seconds to help release the popsicles. Gently pull them out.
Serve the popsicles immediately, garnished with fresh mint leaves for a pop of color and added freshness.
