Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup coconut sugar
  • 1/4 cup chia seeds
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon sea salt
  • 1/2 cup almond milk (or any plant-based milk)
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips (vegan)

For the Maple Tahini Drizzle

  • 1/4 cup tahini
  • 2 tablespoons maple syrup
  • 1 tablespoon lemon juice
  • Water, as needed for consistency

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the rolled oats, almond flour, coconut sugar, chia seeds, baking powder, baking soda, cinnamon, nutmeg, cardamom, and sea salt. Stir until all dry ingredients are well mixed.

In another bowl, whisk together the almond milk, melted coconut oil, and vanilla extract until smooth. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the dark chocolate chips.

Using a tablespoon, scoop the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of the spoon.

Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

While the cookies are cooling, prepare the maple tahini drizzle. In a small bowl, whisk together the tahini, maple syrup, and lemon juice. If the mixture is too thick, add water a teaspoon at a time until you achieve your desired drizzle consistency.
