  • 2 tablespoons powdered gelatin
  • 1/2 cup cold water (for gelatin)

Instructions

Start by preparing your workspace. Gather all your ingredients and tools, which include a candy thermometer, a stand mixer (or a hand mixer), and an 8×8-inch baking dish lined with parchment paper.

In a small bowl, combine the cold water and powdered gelatin. Let it sit for about 10 minutes to bloom.

In a medium saucepan, combine the granulated sugar, corn syrup, and water. Place it over medium heat and stir until the sugar has dissolved. Once dissolved, stop stirring and attach the candy thermometer. Allow the mixture to boil until it reaches 240°F (soft-ball stage).

While the sugar mixture is boiling, start beating the bloomed gelatin in your stand mixer on low speed. Once the sugar mixture reaches 240°F, carefully pour it into the mixer bowl with the gelatin while it’s still mixing. Increase the speed to high and beat for about 10 minutes until the mixture becomes thick and fluffy.

Add the vanilla extract and salt, mixing until just combined.

Pour the marshmallow mixture into the prepared baking dish, smoothing the top with a spatula. Let it sit at room temperature for at least 4 hours or overnight to set.

Once set, dust a clean surface with powdered sugar and cornstarch. Carefully lift the marshmallow slab out of the dish using the parchment paper. Cut into squares using a greased knife, then toss each piece in a mixture of powdered sugar and cornstarch to prevent sticking.
