Ingredients
- 1 cup of all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup coconut oil, melted
- 1/2 cup brown sugar, packed
- 1/4 cup molasses
- 1 tablespoon ground flaxseed mixed with 3 tablespoons water (flax egg)
- 1 teaspoon vanilla extract
- 1/4 cup granulated sugar (for rolling)
Instructions
Start by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, ginger, cloves, and salt. Set aside.
In a large mixing bowl, combine the melted coconut oil and brown sugar. Mix well until the sugar is fully incorporated. Add the molasses, flax egg, and vanilla extract, stirring until smooth.
Gradually add the dry ingredient mixture to the wet ingredients, stirring until a soft dough forms. Do not overmix; it’s okay if there are a few small lumps.
Using a tablespoon or cookie scoop, scoop out portions of the dough and roll them into balls. Roll each ball in the granulated sugar to coat before placing them on the prepared baking sheet, leaving space between each cookie as they will spread while baking.
Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still slightly soft. Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Enjoy your spiced vegan molasses cookies with a cup of tea or coffee, or share them with friends and family who might just become fans of plant-based desserts!
