- 1 cup whole grain oats
- 1 cup almond flour
- 1/2 cup coconut sugar
- 1/4 cup coconut oil, melted
- 1/4 cup molasses
- 1 tablespoon ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons chia seeds
- 1/4 cup water
- 1/2 cup chopped crystallized ginger (optional)
Instructions
Start by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper.
In a small bowl, combine the chia seeds and water. Let it sit for about 10 minutes until it forms a gel-like consistency.
In a large mixing bowl, combine the oats, almond flour, coconut sugar, ground ginger, cinnamon, baking soda, and salt. Mix well to ensure all dry ingredients are evenly distributed.
In another bowl, whisk together the melted coconut oil, molasses, and chia seed gel until smooth.
Pour the wet mixture into the dry ingredients and stir until fully combined. If you’re adding chopped crystallized ginger, fold it in gently at this stage.
Using a tablespoon, scoop out portions of the dough and roll them into balls. Place them on the prepared baking sheet, leaving some space between each cookie, as they will spread while baking.
Gently press down each ball to flatten it slightly, creating a round shape.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The centers may look soft, but they will firm up as they cool.
Once baked, remove the ginger snaps from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
