Ingredients
- 1 cup aquafaba (liquid from canned chickpeas)
- 1/2 teaspoon cream of tartar
- 1/2 cup granulated sugar
- 1/2 cup dark chocolate (vegan), chopped
- 2 tablespoons coconut oil or vegan butter
- 1 tablespoon vanilla extract
- Zest of 1 orange
- 1/4 cup all-purpose flour
- Pinch of salt
- Cocoa powder, for dusting
Instructions
Preheat your oven to 375°F (190°C) and generously grease four ramekins with coconut oil or vegan butter. Dust the insides with cocoa powder to prevent sticking.
Melt the dark chocolate and coconut oil together in a heatproof bowl over a pot of simmering water (double boiler method) or in the microwave, stirring until smooth. Remove from heat and let it cool slightly. Stir in the vanilla extract and orange zest.
In a separate bowl, use an electric mixer to beat the aquafaba and cream of tartar until soft peaks form. Gradually add the granulated sugar while continuing to beat until stiff peaks are achieved. This will take around 5-7 minutes.
Gently fold the melted chocolate mixture into the whipped aquafaba until just combined, being careful not to deflate the mixture.
Sift the flour and salt over the chocolate-aquafaba mixture. Gently fold the dry ingredients in until there are no visible streaks, but be mindful to retain as much air as possible.
Evenly divide the soufflé batter among the prepared ramekins, filling them about three-quarters full. Run your thumb around the edge of each ramekin to help the soufflés rise evenly.
Bake in the preheated oven for 12-15 minutes or until puffed and set on the outside but still soft in the center. The tops should be slightly cracked and have a beautiful rise.
Remove from the oven and serve immediately, dusted with additional cocoa powder or accompanied by a dollop of vegan whipped cream, if desired.
