There’s something magical about the simplicity of an icebox cake. Growing up, my grandmother would whip up this delightful dessert every summer during family gatherings. The anticipation would build as we waited for it to chill, but the moment it was served, it was all hands on deck! This modern twist on the classic icebox cake incorporates rich chocolate and tart cherries, evoking memories of warm afternoons spent laughing and sharing stories.

This no-bake dessert is not only easy to prepare, but it also delivers a stunning visual appeal that will impress your family and friends.

Ingredients

  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chocolate pudding mix (instant)
  • 2 3/4 cups milk
  • 1 package (14 oz) chocolate wafer cookies
  • 1 cup cherry pie filling (store-bought or homemade)
  • Grated chocolate or cocoa powder for garnish
  • Fresh cherries, for garnish (optional)

Instructions

Start by preparing the chocolate pudding according to the package instructions, using 2 3/4 cups of milk. Whisk until it thickens, then set aside to cool completely.

In a separate bowl, use an electric mixer to whip the heavy cream until soft peaks form. Gradually add in the powdered sugar and vanilla extract, continuing to whip until stiff peaks form. Gently fold about half of the whipped cream into the cooled chocolate pudding until combined, creating a luscious chocolate mousse.

Now it’s time to assemble the cake! Grab a 9×13 inch baking dish. Start with a layer of chocolate wafer cookies, arranging them in a single layer on the bottom of the dish. You can slightly overlap them if necessary.

Spread a layer of the chocolate mousse over the cookies, smoothing it out evenly. Then, spoon half of the cherry pie filling over the mousse, spreading it gently to cover the surface.

Repeat the layers: another layer of chocolate wafer cookies, followed by the remaining mousse, and top it off with the rest of the cherry pie filling. Finish with a final layer of chocolate wafer cookies. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight to allow the flavors to meld and the cookies to soften.

When you’re ready to serve, remove the icebox cake from the fridge. Spread the remaining whipped cream over the top for a beautiful finish. For an extra touch, garnish with grated chocolate or a light dusting of cocoa powder. If you have fresh cherries, they make a delightful garnish as well!

Slice into squares and serve chilled. The layers of rich chocolate, creamy texture, and tart cherries will take you back to those cherished summer memories, while this modern twist will keep your guests coming back for more!
