Vanilla Cupcakes with a Twist of Lemon

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1 pinch of salt

Instructions

Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.

In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and lemon zest.

In a separate bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined.

Fill each cupcake liner about two-thirds full with batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Once baked, remove the cupcakes from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Enjoy these vanilla cupcakes plain, or top them with a simple lemon glaze for an extra burst of flavor. Mix 1 cup of powdered sugar with 2 tablespoons of lemon juice until smooth, drizzle over cooled cupcakes, and serve!
