As I embarked on my journey toward a healthier lifestyle, I wanted to recreate this classic dessert while infusing it with superfoods and nutritious ingredients. The result? These indulgent Superfood Whoopie Pies filled with creamy avocado chocolate goodness that won’t compromise your health!

Ingredients

For the Whoopie Pie Cookies:

  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup coconut sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened applesauce

For the Avocado Chocolate Cream Filling:

  • 1 ripe avocado
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup (adjust sweetness to taste)
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a mixing bowl, combine almond flour, cocoa powder, coconut sugar, baking soda, and salt. Whisk together until well combined.

In another bowl, beat the eggs, then add the vanilla extract and applesauce. Mix until smooth.

Gradually add the wet ingredients to the dry ingredients, stirring until you have a thick batter. Let the mixture sit for about 5 minutes for the flavors to meld.
